Speedy Breakfast Mug Cake

Breakfast is one of those things that most people with busy lives struggle with. Even tougher is keeping it healthy, and as most of us know healthy and quick doesn’t normally go together. I for one am very much a sweet breakfast kind of gal. It gets me out of bed in the morning, and provides great pre-workout fuel when I need it. After 8 hours of sleep, your body is vastly depleted of its energy stores, which makes a good breakfast so important when it comes to curbing cravings and keeping us focused and energized throughout the day. A combination of complex carbs, protein and a bit of fat will keep you full for hours until lunchtime comes around, which is why porridge is usually my go-to food. Sometimes though I fancy shaking things up a bit – enter, the breakfast mug cake. Now I know what you’re thinking…cake for breakfast?? Well fortunately because this mug cake is made up of some nifty good-for-you ingredients, this makes a great start to the day. Now..on to the recipe!


Breakfast Banana Mug Cake

Serves: 1 Cooking Time: 2 mins


  • 1/2 banana
  • 1 egg
  • 3 tbsp coconut flour
  • 1 tsp coconut sugar
  • 2 heaped tsp coconut oil
  • 1/4 tsp baking soda
  • pinch of salt
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla
  • pinch of cacao nibs
  • 1 heaped tsp nut butter



Add the flour, coconut sugar, baking soda and salt into the mug and stir well


Mash the banana in the bottom of the mug and add coconut oil


Crack the egg into the mug and whisk with a fork to combine (making sure to get into the corners)


Stir in optional extras such as cinnamon, vanilla and cacao nibs


Add a dollop of nut butter on top so that it cooks into the middle of the cake


Microwave for around 2 minutes (800w) depending on mug thickness and microwave power
