Nutty Millet Porridge

Creamy Millet Porridge

Serves: 1 Cooking Time: 20 minutes

Ingredients

  • 1/2 cup millet grains (left to soak overnight)
  • 1 tbsp maple syrup
  • 1/2t tsp vanilla extract
  • 1 tbsp of blueberries
  • 1/4 tsp of cinnamon
  • 2 tbsp coconut cream
  • pinch of salt
  • 1/2 banana
  • 1 heaped tsp almond butter

Instructions

Soak millet overnight in 1 cup of warm filtered water and 1 tbsp of an acidic medium* for 6-8 hours.

Bring to hob, add maple syrup, cinnamon, vanilla extract, blueberries and salt and cook millet on a low heat for 15 minutes, stirring occasionally until the grains puff up

Towards the end of cooking, stir in the coconut yoghurt/cream

Leave grains to sit for 5 minutes to further plump up

Finally top with banana, almond butter and any additional toppings of your choosing

Notes

Optional toppings: 1 tbsp almond butter Sliced banana 1 tsp bee pollen *lemon juice, apple cider vinegar, kefir or my personal preference coconut yoghurt
